Number 4: Tex Mex

In my countdown to 40, number 4 on the list of things I’m thankful for is Tex Mex.

I had no idea how big an impact real Tex Mex has had on my life until I had to live without it for nine months in Oregon. I searched high and low while there, eating at taco stands and even finding a joint called Esparza’s Tex Mex in the middle of the city. I was ecstatic when I found it, only to become dismayed when I saw photos of Ronald Reagan in cowboy gear on the wall and Galveston Red Snapper listed on the menu.

And I’m not alone. I have friends who’ve moved to Pennsylvania and California who schedule their Houston visits around Tex Mex restaurant hours.

I guess you can say my conversion to 100% Texan is now complete. (And to think I used to think “fajitas” rhymed with “vaginas.”)
